Simple Corn Curry

This is a pretty simple recipe that can be used as a side dish with rice, roti, dosa; filling for a sandwich; and for an improvised pasta or noodles.


Recipe:

  1. I have used frozen corn for this recipe. If you use the same, take 2 cups of corn about 10 minutes before you start cooking and allow it warm up to the room temperature.

  2. If the corn is soft, just wash it and use it. If it is still hard, add the corn to warm water and soak for 5 minutes.

  3. Meanwhile, chop 2 medium sized tomatoes and 1 large onion and 1 green chilli.

  4. Add the onion and green chillies and sauté until the onion turn golden brown. Then add the tomatoes and cook for 5 minutes.

  5. Add salt, turmeric, and red chilli powder and cook until the raw flavour is lost.

  6. Finally add the corn and sauté for 5 more minutes.

Note:

You can add minced garlic after adding the onions. You can also garnish it with corriander, if available.
